Shrove-tide (or Pancake Week) is known as the most jovial and lavish-in-repast Slavic feast symbolizing the beginning of the spring revival of nature. First of all, this tradition is associated with bountiful and abundant treats, with all sorts of pancakes playing the key role. According to an old token, the more pancakes you manage to eat in the Pancake Week, the more successful and profuse the year will be. The Baltschug Kempinski Moscow hotel comes out to demonstrate its own version of this ancient folk custom. To mark the end of winter the Baltschug restaurant invites you on a tasting of traditional Shrovetide dishes by the hotel’s chef Nico Giovanoli to take place on March 3-9. Among the most delicious festival viands are pancakes with smoked salmon and creamy sauce, «Sepia» pancakes with sturgeon and beetroot, pancakes baked under cheese with ratatouille and caramelized pineapple and chocolate sauce. The Pancake Week is celebrated on a large scale in the Borodino business hotel as well. On March 3-9 the «Kutuzov» and «Denis Davydov» restaurants offer a special pancake menu, specially made up by the hotel’s chef Viktor Tchizhevskiy. The guests are having the chance to taste 10 kinds of goldish pancakes and fritters with different appetizing stuffing, from sour cream and honey to salmon and caviar. The hotels’ restaurants pay equal attention and cultivate both Russian and European gastronomical traditions, whilst the masterly culinary skill of the chef is definitely to the liking of even the most exigent guests.
